This session focuses on Delamain’s iconic Pale & Dry; its creation and the art of blending, highlighting the ageing and evolution of different cognacs and how they can contribute to the mystery of final blended cognac. The tasting will consist of a selection of cask samples at different stages of ageing that will be used to tell the story of the effect of ageing in seasoned casks and different cellar temperatures can have on the evolution and style of an eaux-de-vie. Hine’s philosophy of creating the highest quality Cognacs respects the Maison’s heritage and terroir. This is noted by the British Royal family who bestowed the Royal Warrant for Cognac to Hine in 1962; the only Cognac house to hold this honour. Cognac Frapin: A trio of XO's

Founded in 1270, Frapin has always been in the heart of Cognac. On their family domaine, Cellar Master Patrice Piveteau oversees the Cognacs as they age in different locations around the Estate. At Frapin there are two types of cellars; floor level 'humid' cellars and 'dry' cellars located on the first floor. These locations have a clear impact on the character of the final Cognac. Join Patrice as he discusses how he uses the cellars to build the final cognac styles - and you can also taste along, with the Frapin VIP XO Cognac, Chateau de Fontpinot XO Cognac and Cigar Blend Cognac.

Hine Early Landed

The tradition of aging Cognac in the UK dates back to the 19th century when Hine first shipped their cognacs from Jarnac to the cooler, more humid cellars in Bristol. Hine continues this practice in the present day and is the only house in cognac to do so. Don’t think where you age a product makes a difference to the final taste? Well think again, this tasting will show just how important the terroir of the cellar is.
